It's the off season so here's an off season question?
Use to do gas but now an avid charcoal fan. Weber owner and recently purchased a cheaper Kamado Char Griller to test the slow cook.

Charcoal whenever possible, but gas if speed is more important. Slow cooking with indirect heat is nicer with charcoal, especially if one wants the nice taste.

Charcoal and hikory chips can't go wrong.

Gas (unfortunately) The wife doesn't like the mess the charcoal makes in the waste bin....especially when it catches fire. But occasionally I'll take water soaked Mesquite chips and layer a few in the gas grill just for old time's sake.
